One of my favourite things about living in Austin, Texas was brunch at the Omeletry - a short stack of gingerbread pancakes smothered in maple syrup, bottomless coffee, and the wonderful ambience of the all-American diner! 'Table for Two', while being a rather tragic love song, takes its inspiration from that. I started writing it when I was living in Austin in the 1990s and it went through numerous rewrites before reaching its final iteration in 2012.
